FRENCH ONION SOUP


Overflowing with rich taste, this time-honored soup is a classic prelude to dinner or pairs perfectly with salad for lunch.

Ingredients :


  • 1 tablespoon vegetable oil
  • 2 large sweet onions, thinly sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sugar
  • 1/4 teaspoon pepper
  • 4 slices (1-inch thick) French bread
  • 1/4 cup dry sherry
  • 4 cups reduced sodium beef broth
  • 1 1/2 teaspoons roasted beef base, such as Better Than Bouillon
  • 1 cup (4 ounces) shredded Swiss cheese


Method :

Preheat broiler. In a large saucepan, heat vegetable oil over medium heat until hot. Add onions, thyme, sugar, and pepper. Cover and cook until onions are tender, about 15 minutes, stirring frequently. While onions are cooking, arrange bread slices on a baking sheet; broil until lightly toasted, turning once, about 2 minutes. 

Transfer bread slices to a plate. Add sherry to onion mixture; cook 1 minute, stirring frequently. Add broth and beef base; cover saucepan and bring to a boil.

Meanwhile, arrange 4 ovenproof soup bowls or crocks on the baking sheet. When soup boils, remove from heat and ladle evenly into bowls. Place bread slices on soup; sprinkle cheese evenly over each bowl of soup. Place under broiler and broil until cheese melts and bubbles, about 1 minute.
