FRESH BERRIES WITH CANNOLI CREAM


Whether you pick them yourself or buy them from a farmers’ market, roadside stand, or supermarket, fresh berries get a flavorful boost when tossed with a splash of a raspberry liqueur mixture. Luscious cannoli cream is the ideal topping to this easy and elegant seasonal delight.

Ingredients :

  • 4 cups mixed fresh berries such as raspberries, blackberries, blueberries, and/or sliced
  • strawberries
  • 2 tablespoons raspberry-flavored liqueur, such as Chambord
  • 1 tablespoon sugar
  • 1 teaspoon fresh lemon juice
  • 1 cup whole or skim milk ricotta cheese
  • 3 tablespoons confectioners’ sugar
  • 1 teaspoon vanilla
  • 1/3 cup heavy (or whipping) cream
  • 2 tablespoons miniature semisweet chocolate chips, divided
  • Sliced almonds (optional)
  • Mint sprigs (optional)


Method :

For berries, in a large bowl, combine berries, raspberry-flavored liquor, sugar, and lemon juice; toss to combine. For cannoli cream, in a medium bowl, combine ricotta cheese, confectioners’ sugar, and vanilla. In a separate, medium bowl, beat heavy cream until soft peaks form. Gently stir whipped cream into ricotta cheese mixture. 

Stir in 1 tablespoon chocolate chips. To serve, divide berries among 6 dessert dishes or martini glasses. Spoon cannoli cream over berries; sprinkle with the remaining 1 tablespoon chocolate chips and sliced almonds, if desired. Garnish with mint sprigs, if desired. Makes 6 servings.
