It’s standard practice at publications like Bon Appétit and Epicurious to have multiple editors cook through recipes before they are published to make sure they will work for, well, people like me: cooking enthusiasts who are not necessarily trained kitchen experts. The first time I volunteered, I was totally in my head about it, afraid I didn’t have the chops to be useful and that I was wasting our food team’s time. Spicy Beef and Broccoli Zoodle Soup



THIS DELICIOUS BEEF and broccoli soup is fast and will fill you up very well. 

Time: 25 minutes Calories: 355 Fat:  25g Protein: 27g Net carbs: 4g 

Ingredients: 

  • 1/3 cup of chopped fresh green onion 
  • A ¼ cup of hot sauce 
  • A ¼ cup of apple cider vinegar 
  • A ¼ cup of coconut aminos or soy sauce 
  • 1 large zucchini, spiralized for noodles 
  • 1 ½ lb. of top sirloin steak, cut into 1” pieces
  •  2 tbsp. of avocado oil 
  • 2 minced cloves of garlic 
  • 2 ½ cups of broccoli florets 
  • 3 tbsp. of fresh ginger minced
  • 6 cups of beef broth 
  • 8 oz. of sliced Bella mushrooms 


Method: 

1.Set the Instant Pot on sauté mode, then add the oil to it, 

2.Add the garlic, ginger, and steak to the pot and cook until all the sides of the steak are browned. Hit the cancel but- ton. 

3.Add the mushrooms, vinegar, broccoli, aminos, broth, as well as the hot sauce then stir properly. Use the lid to cover it. 

4.Set on manual and cook for 8 minutes on high pressure. Quick release the pressure. 

5.Open the lid carefully and flavor to taste. Stir in the onion and zucchini. 

6.Serve.
