Potatoes with Eggs and Green Beans


  • 2 Tbsp. olive oil
  •  1 c. green beans 
  • 2 lbs. peeled and diced potatoes 
  • 1/8 tsp. red pepper, crushed
  •  2 garlic cloves 
  • ½ tsp. salt 
  • 4 eggs Ground pepper
  •  Paprika 


1.If you use fresh beans, you can cook them in some water in a saucepan so they become crisp tender, which will take around 3 minutes. Drain this out and place under cold water. 

2.Next, heat up some oil in a skillet and heat it up before spreading your potatoes out on the skillet in one layer. Make sure to turn these potatoes over a few times and continue cooking for about 20 minutes. 

3.After this time, you can stir in the pepper, salt, red pepper, garlic, and green beans. 

4.Take your eggs and crack them in a bowl before slowly adding them into the pan with the vegetables. Cover the skillet and let it cook for about 5 minutes so that the whites have time to set. Sprinkle on some paprika and then serve the dish right away.
