Pancake with Greens


  • 2 tablespoons of cilantro (chopped) 
  • 1 tablespoon of parsley (chopped) 
  • ½ teaspoon of salt 
  • 2 eggs 
  • 4 tablespoons of cashew flour 
  • ½ teaspoon of baking soda 
  • 1 tablespoon of chives 
  • 2 tablespoons of almond milk 
  • ½ teaspoons of olive oil 
  • ¼ teaspoon of sea salt 


1.Combine the chopped parsley, cashew flour, chopped cilantro, salt, chives, baking soda, sea salt and almond milk in a bowl. 

2.Beat in the egg and stir until mixture is homogenous. 

3.Pour in the olive oil to the instant pot bowl. 

4.Flatten the pancake bowl after pouring it into the bowl. 

5.Close the instant pot and set to low pressure (rice mode) and cook for 45 minutes. 

6.Transfer to plate to serve and enjoy.
