How To Make A Carnitas

THIS DISH IS VERY NICE, and the addition of green salsa and tangy lime juice just makes it heavenly. 

Serves: 8  - Time: 1 hour 5 minutes - Calories: 235 - Fat:  13g - Protein: 20g - Net carbs: 4g 


  • A ½ cup of lime juice 
  • 1 tsp. coriander 
  • 1 tsp. of sea salt 
  • 1 x 12 oz. jar sugar-free green salsa 
  • 2 tsp. of cumin 
  • 2 tsp. of garlic powder 
  • 2 tbsp. of tapioca starch 
  • 3 tbsp. of coconut oil 
  • 3 lb. pork shoulder roast, sliced into
  • 2" slices 


1.Get a large bowl and mix all the spices in it. 

2.Put the pork into the spice mixture and press it into the flesh. 

3.Pour the oil into the Instant Pot and set on sauté. Put the meat in the Instant Pot and allow to brown. 

4.Add the lime juice and salsa to the pot and stir properly before covering the lid. 

5.Set on Manual and cook for 35 minutes on high pressure. 

6.Quick release the pressure and take the lid off carefully. 

7.Set the Instant Pot on sauté mode and cook for about 10 minutes until the sauce reduces and thickens.
